Creamy Spinach and Mushroom Pasta

Introduction

This creamy spinach and mushroom pasta is a hearty, vegetarian-friendly dish that’s both comforting and satisfying. Perfect for a cozy dinner!

Ingredients:

• 12 oz fettuccine or your favorite pasta

• 2 tbsp olive oil

• 2 cups mushrooms, sliced

• 3 garlic cloves, minced

• 2 cups fresh spinach

• 1 cup heavy cream

• ½ cup grated Parmesan cheese

• Salt and pepper, to taste

Instructions:

1. Cook pasta according to package instructions. Reserve ½ cup pasta water.

2. In a skillet, heat olive oil. Sauté mushrooms until golden. Add garlic and cook for 1 minute.

3. Stir in spinach and cook until wilted. Add heavy cream and Parmesan cheese, stirring until creamy.

4. Toss the sauce with pasta, adding reserved pasta water to loosen if needed. Serve with extra Parmesan.
